Green Banana Breakfast Porridge

Here’s a good way to use some of your green bananas, especially “frog” bananas, which are one of the better-tasting bananas for cooking.

Makes 2 servings.

Ingredients

2-4 green bananas, depending on their size

1/4 cup lemon juice

1 cup milk (any kind), plus more if needed

1 cup water

1/4 tsp allspice

1 cinnamon stick or 1/2 tsp ground

dash nutmeg

salt

1 tsp vanilla

sweetened condensed milk to taste (maybe half the can)

Directions

Cut ends off bananas, then peel them all. To peel each banana, score the peel along the ridges, then wedge the point of the knife just under a section of peel and lift that section off.

Cut each peeled banana into large chunks, and drop them into a bowl of water that has had some lemon juice squeezed into it to keep them from turning brown as you work.

Make a mixture of 1 cup milk and one cup water. Pour half the liquid into the blender.

Put the lid on the blender, then take off the little top lid so you have a hole for bananas and liquid.

Drop a few pieces of banana in and start blending at a medium speed. Blend all the pieces, adding liquid if needed, until you get a smooth consistency.

Pour the blended banana into a pot on the stove, along with the rest of the liquid mixture. Add spices and cook for 15-20 minutes, stirring constantly to keep it from burning.

If needed, add more milk, heated in the microwave so it doesn’t stop the cooking.

In a pot with a lid, bring the water to a boil. Drop the peeled green bananas into the water and boil. Test for doneness by sticking with a fork.

The bananas will not be sweet, but the taste will be good. Mash them up and add milk until you get the consistency you want. Note that the starch will develop some as you stir the flesh, making it dry.

Season to taste with cinnamon and honey.
