Makes 2 quarts
Ingredients
1 quart Chicken Stock or Bone Broth
meat from making chicken broth, simmered half an hour to 1 hour (see recipe)
1 onion, chopped
3 stalks celery, chopped
3 large carrots, chopped
Directions
Put the chicken broth in a large pot with a lid. As soon it can be handled, take as much of the meat off the bones as you can and add it to the pot. Add the chopped vegetables and bring to a boil. Stir, turn heat down to medium-low, cover and simmer half an hour.
Serve with a garnish of sour cream and/or finely chopped green onion.
